Corney & Barrow: Official Wine Partner 2023

Our official wine partner Corney & Barrow have once again curated a wonderful selection of wines for you to discover and enjoy during our 2023 Season. From this list we have also paired alongside our food menu, a suggested pairing for each dish. We asked C&B’s Head of Merchant Sales, James Franklin, to share some of his personal favourites.
“This year and we are very excited to share for the first time ever a selection of wine recommendations for each of the carefully prepared dishes to make the experience that extra bit special. These are just two examples of the wine pairings.
Ollie Dabbous has once again created a stunning menu for this Season. Reading through the starters, a tuna tartare caught my eye and my thoughts turned immediately to one of the new wine additions to this year’s list. Sancerre Caillottes from Domaine La Croix Saint Laurent has been with the Cirotte family since 1932. “Caillots” is one of the classic stony, calcareous soils found in Sancerre which gives the wines stunning purity and delicate fruit flavours, key here so as not to overpower the tuna, but enough backbone to compete with the horseradish.
Growing up on a farm, provenance of produce was everything. Well take the humble potato as an example, well there is nothing quite like a Jersey Royal. Served with the lamb rump and mint this is a match made in heaven. Lamb immediately takes me to Spanish wines. Peter Sisseck is one of the most respected and revered names in the world of wine and the man behind the iconic Pingus.
Back in early 2000’s Peter embarked on a project, fuelled by his love and indeed intimate knowledge of the Ribera del Duero. Working with the very best local plots (over 600) and adopting biodynamic principles, PSI was first released in 2007. It rapidly became a firm favourite as one of the least expensive “fine wines” in the world. Made from a local variant of Tempranillo, PSI exhibits lovely soft rounded red berry fruits with a hint of spice working in complete harmony with the overall dish.”
